Today we picked the first lot of peas, most of which we freeze to use throughout the coming year.
Firstly we pod them.
Then blanch for 4 minutes.
Refresh under running cold water also for 4 minutes, a wooden spoon under the bowl helps to direct the water out at only one place but keep bowl close to sink side to stop them escaping !
Drain in a colander.
Put in bags, I find a Jam Funnel is a great help with this.
Ready to freeze.
